Château Minuty is one of the main producers of the Côtes de Provence, producing top-of-the-range rosé wines. Historical know-how combined with the use of state-of-the-art technology guarantees this quality.

FOR A MINUTY WINE, IT ALL STARTS IN THE VINEYARD, IN A PRESERVED ENVIRONMENT
Great importance is attached to enriching the soil with natural goat and sheep manure, rich in organic matter. Working the soil allows the micro-organisms present in the earth to breathe, prepares the soil to receive rainwater and makes it easier for the roots to penetrate deep into the soil, from the very first years, in order to get water from the subsoil. The vines are cultivated using sustainable methods, without weedkillers or pesticides. This environment, bordered by a protected wooded area, guarantees a privileged ecosystem.

VINIFICATION & MATURING: RESPECT AND EXPRESSION OF THE TERROIR
Minuty is one of the last estates in the Côtes de Provence where the grapes are harvested entirely by hand to ensure perfect integrity of the grapes when they arrive at the winery and thus limit the extraction of plant matter into the must. The bunches arriving intact go through the destemmer where the stalks are removed. After a light crushing, the grapes are immediately cooled to a low temperature and inerted to avoid any oxidation phenomena that would lead to an irreversible loss of aromas and structure.

The juices are then passed through our latest generation pneumatic presses where they are first carefully drained and then pressed at low pressure to extract their full expression. After a long fermentation at low temperature to express all the aromatic potential and all its finesse, the wine is racked and then gradually decanted during the winter period. It is then the period of blending where the characteristics of the vintage and the grape varieties are combined to produce our various cuvées.
In an ever-increasing concern for precision and quality improvement, our vinifications are becoming more and more parcel-based. The expression of our terroir combined with the experience of our vineyard is our constant objective.

Our signature can be found in each of the bottles produced thanks to a bottling line equipped with the highest technology to preserve our wines from oxidation. Even if rosé wines represent 85% of our production, red wines are not forgotten. After plot selection and green harvesting, our red wines undergo a long maturation in barrels for one year. During this time, the tannins will soften, the structure of the wine will strengthen and the finesse will develop. The choice of the origin of the wood and the intensity of the toasting will give our vintages a very particular expression and signature.
